Creamy Salmon and White Wine Pasta

Cooking up some creamy Salmon pasta


Ingredients:
400g Pasta of your choice  (cooked as per packet directions)
About a Tbls spoon or so of Olive oil 
1/2 large onion (finely sliced)
1 tsp Garlic (chopped)
1 small chilli (seeds removed and finely chopped)
about 450g of fresh salmon (Sliced)
1/2 cup (125ml) cream
1 Tbls (15ml) Cornflour (Maizena)
1/2 Cup White Wine
Juice squeezed from a lemon
About 1 Tbls Fresh Parsley (less is using dried)
Freshly ground black pepper
Salt to taste
Delicious Salmon Pasta
Method:
* Put salted water on to boil in a large pot for pasta.  Cook as per packet directions
* In a separate pan:  Fry onions in Olive oil until translucent over medium heat, add garlic and Chilli
* Add sliced salmon to the pan and cook for a few minutes.
* Pour in the cream
* In a cup mix the cornflour with a little of the white wine,  add to pan stirring with a wooden spoon to mix through.
* Pour in the rest the white wine.
* Squeeze in the lemon juice
* Add in the freshly chopped parsley, ground pepper, and salt to taste
Serves 4

Macaroni and fresh Tomato Cheese

Everyone (well almost everyone) enjoys a good macaroni cheese.  It is just one of those wonderful homely dishes.  And so easy to prepare.  This is my recipe, I love adding fresh veg in the middle of mine for some extra flavour.

Macaroni and tomato Cheese


Ingredients
500g macaroni pasta
dash of olive oil
625ml (2 and half cups) milk
45ml  (3 Tbls) cornflour
salt, white pepper and nutmeg
375ml (1 and half cups) grated Cheddar Cheese
30ml (2 Tbls) grated Parmesan cheese
10ml (2 tsp) Dijon Mustard
4 fresh Tomatoes sliced
1 bunch fresh Spinach leaves chopped
Macaroni layered with fresh tomato and spinach
Method:
*  Preheat oven to 180C (350F)
*  Cook the Macaroni in boiling salted water as per packet instructions.  Drain and stir in a bit of Olive oil to prevent it from sticking.
*  In a small bowl or mug:  add the cornflour.  Mix to a runny paste with a little of the milk.
*  In a saucepan:  Heat up the milk. Add the cornflour paste, and mix with a whisk until thick and smooth on medium heat.
*  Add and mix in: the salt, pepper, nutmeg, half of the cheese, Parmesan and the mustard.
*  Add the Macoroni and cheese sauce together in a large bowl.
*  In a deep sided rectangular casserole dish add:  Half the Macaroni Cheese mix.  Then add a layer of freshly sliced tomatoes and fresh spinach.   Top with the remainder of the mac cheese.
* And  finally sprinkle with the remaining grated cheese
*  Bake in a moderate oven for about 35 minutes, or until the top is a lovely golden brown.
Ready to go in the oven
Tips and Suggestions:
*  Sprinkle a dash of Cayenne pepper on-top to spice it up.

Creamy bacon mushroom spaghetti

CREAMY BACON and MUSHROOM SPAGHETTI with FRESH AVO
Pasta is so lovely to make and the number of sauces that can be made to go with pasta are endless.  This is a recipe for a lovely creamy one, nice on a cold winter night.

Ingredients:
1 Tbls (15ml Olive oil
6 rashes bacon, chopped small
1/2 onion, chopped finely
1 tsp garlic, crushed
1/2 caspium pepper, chopped
1/2 red chilli, chopped (optional)
1/4 tsp smoked paprika
black pepper, ground
1 tsp chicken stock powder
1 tsp cornflour (maizena)
250ml cream
A few squeezes of fresh lemon juice
1 packet Spaghetti (made as per packet instructions)
1 Fresh Avocado (to garnish)
Grated cheese of your choice

Method
- Fry the bacon and onion in the olive oil until the bacon is a golden brown.
- Add the garlic, pepper, chili, and spices.
- Mix the cornflour in a cup with a small amount of cream to form a paste, gradually adding more cream, add to the pan.
- Stir until sauce thickens (about 10 minutes)
- In the interim cook the spaghetti as per packet instructions.
- Add the lemon juice to the sauce once it has thickened.
- Mix the sauce into the spaghetti
- Plate, and garnish with freshly sliced avo and grated cheese
Serves: 4
